Williams-Sonoma Technique Classes

One of my friends since high school, Kevin Buja, and I have been attending the Williams-Sonoma technique classes.  We've found some more basic than our needs, but there is always something new to learn. For example, the knife sharpening was more useful to us than the knife handling demonstration.  

Here are two of the classes that we attended:

• Sunday August 22: Lessons in Dairy. The class covers the basics of dairy, from assembling a cheese plate to preparing homemade butter and transforming it into savory and sweet spreads. Participants learn how to make fresh ricotta and how a few simple additions can turn whipped cream into a decadent topping.

• Sunday, August 29: Knife Skills and Knife Sharpening. A sharp edge, the correct grip and proper placement of food are all essential components of good knife skills and are all demonstrated in this class. Participants learn how to slice, dice and chop and to make advanced cuts, including chiffonade and julienne. Each participant will receive one complimentary knife sharpening; limit one knife per customer.
