Kutter's Cheese Factory Store



On Saturday, I enjoyed touring Kutter's Cheese Factory, a small, independently operated cheese factory located in Corfu, New York, between Rochester and Buffalo.  They held a “Cheese and Wine Open House” which included free wine and cheese samples, factory tours and live music.  They had a nice turn out. 



Current owner, Brian Bailey, took us on a tour of the factory.  Here, he demonstrates how "cheese is cut".


These cheese molds are manufactured in Denmark.

A "Brown Swiss" calf named "Bluejay".  Brown Swiss milk gives more fat and protein than heffers.


Bluejay is a beauty.
